Summertime Salad
With the hot heat of the summer slowly settling in, there’s nothing worse than heating up your kitchen by having to turn the stove or oven on. Now is the time of year that I start using salads in a lot in our menus, and luckily for me, our 3-1/2-year-old son LOVES, LOVES, LOVES salads. Often, I’ll ask him what he wants for dinner, giving him a few choices, and he chooses salad on his own more times than not.
I created this recipe as a quick go-to salad that is light enough for summer weather, yet filling enough for a whole meal, and it is eagerly devoured by all. It takes just a few minutes to pull together - dig in!
Sweetnicks Chinese Chicken Salad
Dressing:
3 Tbsp red wine vinegar
1 Tbsp soy sauce
1 Tbsp sesame oil
2 Tbsp olive oil
1 Tbsp tamari sauce
4 green onions, finely chopped
1-1/2 Tbsp ginger paste
2 tsp maple syrup
In a small bowl, mix all the dressing ingredients together, or combine in a jar with a tight-fitting lid and shake vigorously. For the salad, combine shredded rotisserie chicken, mixed salad greens, shredded cabbage (use coleslaw mix in produce section), sliced cucumber, mandarin oranges, and thinly sliced red onion. Pour dressing over the salad and thoroughly mix to ensure everything is evenly coated with dressing. Add salt to taste and sprinkle toasted sesame seeds over top. Devour.
