Cool Beans
By now there’s very little to add to the discussion on the benefits of black beans. High in fiber and antioxidants, they help lower cholesterol and LDL levels, they scavenge free radicals and help reduce the risk of cancer. (See my review of Black Bean and Walnut Salad from the 12 Best Foods Cookbook here on Fitfare last month.)
But what I can bring to the table, so to speak, in these hot summer months is a new way to serve them in another refreshing salad that will not only help you stay healthy, but will keep you cool in the process.
Not only do black beans and corn combine to give you a complete protein (although you do not have to eat them at the same time for that benefit), they also taste delicious together. With the lime, tomato and cilantro, they provide a fresh, zesty lunchtime pick-me-up. It makes a great meal to take to work because it does not need to be reheated.
Black Beans and Corn with Lime and Cilantro
2 Tbsp olive oil
1/2 medium onion, chopped fine
1 cloves garlic, minced
salt to taste
1 fresh serrano pepper, minced
2 plum tomatoes, chopped
2 cups cooked black beans, or 2 14.5-oz. cans, rinsed and drained
1 pound bag frozen sweet corn, thawed*
1/4 - 1/2 teaspoon cayenne pepper
3 Tbsp lime juice
1/4 cup chopped cilantro
*Especially good with Trader Joe’s Roasted Corn
Combine all ingredients. Chill for at least one hour to allow flavors to combine. Serve at room temperature.
Makes 4 servings.
