A Piece of (Fit) Cake!


pieceofcake.jpgI was engaged just a few weeks ago, so my new obsession is wedding planning.  When I started thinking about wedding cake, I instantly thought of my favorite bakery in my hometown of Portland, Oregon:  Piece of Cake Bakery.  I worked at a natural food store in Portland during my college years and Piece of Cake was one of our most popular vendors.  They make an effort to create desserts that everyone can eat, even the health-conscious.

The majority of their desserts are vegan, vegan wheat-free, sugar-free, gluten free, and/or soy-free.  In fact, they make nine vegan and wheat-free cakes, five tofu cheesecakes, and four sugar-free cakes.  That’s in addition to other tortes, bars and cakes that don’t have dairy, wheat, soy or animal by-products. 

And while some people may think a cake without sugar or butter isn’t a cake at all, I beg to differ.  Piece of Cake’s desserts are to die for. Their Vegan Irish Oatmeal cake is my absolute favorite… It tastes like a soft oatmeal cookie and leaves you satisfied without feeling like you’ve over-indulged. 

In addition to your regular, everyday cakes, Piece of Cake is known for their elaborate wedding cakes.  They’re beautiful and relatively affordable too.  On top of that, they offer full service catering and specialize in vegan and vegetarian meals.   

But, you don’t have to take my word for it!  The next time you’re in the Pacific Northwest, stop into their bakery and try some of their wonderful treats for yourself.  If you’re not going to be in my neck of the woods, check out their website
