Homemade Roasted Red Peppers

In an effort to save money and become more domesticated, I interviewed numerous of my friends on the proper way to make my own roasted red peppers.   I had just eaten the most delicious grilled chicken with mozzarella cheese and roasted red pepper sandwich, and I was on a mission to duplicate the meal.

A good friend of mine told me that using the broiler is the best way, and I set out to work. The journey ended up being much shorter than I thought as it only took three easy steps to actually get the end product I desired.

3 Easy Steps to making your own Roasted Red Peppers

1. Set the broiler on high and put the red peppers into the oven.

After I wash the red peppers thoroughly, I set though right on top of the broiling pan.  Positioning the peppers so that they may lay on they side is optimal.   This makes it easier to cook the sides and also to turn.   The oven rack is placed on the highest rung, and then I slide the broiling pan right in.   The broiler should be set to high.

2. Turn the red pepper with a set of tongs so all sides are evenly cooked.

Every few minutes, checking to see if the exterior of the red pepper has begun charcoiling is important.    Once it looks as though it has been burned significantly, go in and turn the pepper so that the other sides are cooked as evenly as possible.

3. Once complete, peel the skin, throw away the seeds, slice the pepper and store in the fridge.

After the peppers have been turned and cooked all the way around take out the broiling pan and set it off.   Next, move the peppers into a bowl.  As you do this, you will feel liquid inside the red pepper.  Be sure not to lose this liquid as it is the juices of the red pepper.   Peel the exterior crisped skin and toss it away.  Inside will be a very soft and tender red pepper.  Cut through and pour the juices into a container.    Cut out the seeded portion and then slice the rest of the softened red pepper.   Take the sliced portions and put it right into the container with the red pepper juice.   Put a lid on the container and store in the fridge for future recipes and meals!
