Think Outside the . . . Drive-Thru
I have a confession to make. I love Taco Bell. I know, it’s disgusting. But, I can’t help it! My obsession started in college. I was one of those girls who always hung out with all the guys, and as a result I ended up tagging along for late night Taco Bell runs. And let me tell you, the Crunch Wrap Supreme is heaven wrapped in a tortilla! But now with my wedding eight months away, I decided it was time to give up the Taco Bell and opt for a more healthy option. So, I whipped up my own “Taco Bell” recipe.
Taco Bell’s Crunch Wrap Supreme is a hard shell tostada, covered in oozy cheese, beef, sour cream, lettuce, tomatoes and several other addictive, preservative-ridden ingredients. It’s then wrapped in a tortilla and grilled. Not surprisingly, it’s very easy to replicate at home with healthy, organic ingredients.
You can use any number of veggies for this recipe. I love mushrooms, zucchini and lettuce. You can cook them before you use them if you’d like, or put them in raw. You’ll also need corn tostadas (any organic/natural brand will do) and tortillas. As far as tortillas go, you can opt for the healthier wheat or spelt option, or take the added carbs and use basic flour. For the whole “crunch wrap” to come together, you need a “binding” element such as cheese. You can use a lowfat cheese, or non-fat refried black beans. I’ve found that both are rather tasty. Also, instead of ground beef, I use ground chicken or turkey. Just cook it up with a little mexican seasoning and its good to go (for those of you who’ve seen Taco Bell commercials, I just made a funny)!
To put your healthy crunch wrap together, start by laying out your tortilla. Put a light layer of cheese or beans in the center of the tortilla and then put the tostada on top. Then, put a layer of meat on top of the tostada, followed by your vegetable medly. Finally, all you have to do is wrap it up neatly, throw it on the grill (or in a pan) and wait until the outside is brown and the inside is hot! It’s amazingly delicious, and it makes you feel a whole lot better than Taco Bell does.
Remember, you can make (or in many cases buy) a healthy alternative for almost any fast food/junk food favorite. It may never taste quite the same, but you’ll be surprised at how satisfied you feel after making your own food and knowing that you made a healthier choice!

By the way, I cured myself of Drive Thru-Itis by adopting a simple habit:
Put your purse in the BACK seat of your car, not the front, when running errands. If you have to stop, get out, get your purse, and then get back in your car, or worse, go inside one of these places, you will find you are much less likely to drive through that fast food restaurant on impulse.
