Asparagus Goodness


asparagus.jpgI l-o-v-e asparagus. It’s one of my favorite vegetables, but unfortunately, I’m the only one in our house that eats it. No matter. More for me.

One of the beauties of asparagus is that it could not be simpler to make… whether steamed, blanched or, my personal favorite, roasted, it’s best when it’s not overloaded with heavy sauces. Doesn’t need it. Besides being easy to make, at only 25 calories for 5 spears and backed with vitamins K, C and A, as well as folate, it’s something you can feel good about eating.

When choosing asparagus, make sure all the spears in the bunch are the same thickness (allows it to cook evenly), and the tips should be dark green or purple, and firm.

When you get your asparagus home, undo the bunches, trim the ends and wrap it in a damp paper towel and store in a loose plastic bag in your refrigerator. It will keep for up to 4 days.
