Cooking Tips from Canyon Ranch Spa’s Corporate Chef

recipe_granita.jpgChef Scott Uehlein believes that “healthy eating doesn’t mean you have to forgo flavor,” and that’s certainly a sentiment I can support. Chef Uehlein is the Corporate Chef at the exclusive Canyon Ranch Spa, and has recently created a spate of easy-to-prepare recipes for the Florida Department of Citrus.

To bring out enhanced taste in your favorite dishes, Chef Uehlein feels that 100 percent orange juice is a healthy and convenient flavor enhancer and “encourages home cooks to take it beyond the breakfast table to boost the flavor and nutrition of their recipes.”

Chef Scott Uehlein’s Juicy Cooking Tips:

1. Use 100 percent orange juice in place of some of the vinegar and sugar in your favorite marinade recipes. Orange juice is a more healthy replacement for these ingredients and provides the perfect balance of sweet and sour flavors.

2. Substitute 100 percent orange juice for white wine in recipes for sauces. It’s a great way to incorporate more fruit in your diet.

3. One hundred percent orange juice can be used instead of milk in some baking recipes for an additional dimension of flavor, as well as increased nutritional value.

4. To cut down on calories and boost flavor in thick, sweet barbeque sauces, add 100 percent orange juice to your favorite BBQ sauce.

Stay tuned to Fit Fare … an exclusive interview with Chef Uehlein is coming soon. In the meantime, check out these healthy international-inspired recipes from Chef Uehlein featuring orange juice.
