Fun with Grilled Desserts

Have you noticed that dessert is often overlooked at summer barbecues? At my friends’ parties, the burgers and buns are covered, someone usually takes care of the chips and dips and, if it’s a special event, there might even be some side salads. But dessert is usually an afterthought, which means store-bought cookies or a box of brownies.
This weekend, I wanted to shake up the barbecue dessert table by firing up something that’s not only delicious but also healthy. Warning: your friends may be skeptical at first, but one taste of this warm dessert and they’ll be making room on the coals for these fruity sundaes.
The recipe takes ripe but firm peaches, plums and nectarines and turns them into a sort of reconstructed cobbler. After the fruit gets some good grill marks and softens a bit, I cut it up into bite-sized pieces. Then I add a dollop of Greek yogurt and a sprinkling of granola. It’s simple and quick and completely satisfying.
Staying healthy at a barbecue isn’t always easy, especially when there are desserts involved. This grilled fruit sundae promises to take care of your sweet tooth and your daily fruit quota. To me, that a perfect ending to any summer barbecue.
Grilled Fruit Sundaes
serves 4
2 ripe but firm plums
2 ripe but firm peaches
2 ripe but firm nectarines
1 tub of Greek yogurt
1 cup of granola
Cut the plums, peaches and nectarines in half and remove pits.
Lightly coat the cut side of the fruit with olive oil.
Place fruit on a medium hot grill, cut side down, and cook for a few minutes, checking after a few minutes to prevent burning.
Cut the fruit into bite-sized pieces.
Create sundaes by portioning 1/4 of the grilled fruit into each bowl and adding yogurt and granola on top.
