Eat Pumpkin - It’s Good for You
Now that the Fall season is finally here, it’s time for pumpkin pie, falling leaves, cider donuts and apples fresh-picked from the orchard. I love, love, love pumpkin pie, and it’s one of the favorite perks of Fall. Unfortunately, since my husband doesn’t care for it, I don’t make it that often. It’s unfortunate, because it’s one of those desserts that you can feel good about eating.
Packed with high levels of beta carotene, which switches up to Vitamin A, it’s also a nice healthy dose of antioxidants. Today, during a trip to Costco, I picked up one of their pumpkin pies, figuring if no one else would eat it, at least I could enjoy it, and at its humogous size, it’s quite the bargain at $5.99. Surprisingly enough, our five-year-old son not only asked for a piece, but gobbled it right up. Like mother, like son.
