Hi Lisa - thanks for visiting.

I suspect you're right about the need for a vegetarian entree - I for one ate far too much at Christmas this year. But the goats cheese and red onion tart was delicious - and eaten by several omnivores as well as the vegetarians!

What do you put in your cassoulet?

Thanks for taking the mystery out of what vegetarians eat. :-) Especially the notes on gelatin and rennet, which are not typically considered by meat eaters.

Our families now make everything on the table vegetarian, which is very easy to do, except for the turkey or ham. I don't usually find that a vegetarian entree is necessary, because there's usually a plethora of other foods to eat.

However, I'm going to start bringing my vegetarian cassoulet in the future; it will make a great side dish for the meat eaters, and will illustrate that vegetarian holiday food can be as delicious as non-veg!
