Light & Easy Bananas with a Dairy-Free Caramel Sauce
The other day I stumbled across a cool recipe website called Allergycooks. As you may have guessed, the site caters to food allergies, though they are a bit more dedicated than most. All of the recipes from Allergycooks are free from wheat, egg and dairy products. The site is based out of the UK, but anyone, regardless of location, can sign up. The one caveat that this frugal foodie found, was that there is a fee … but, compared to the price of a cookbook, it seems reasonable. Annual membership costs £10 (a bit steeper for those of us bartering with US dollars), and for this you will receive 100+ original “free-from” recipes each year.
For a sneak peak of their offerings, they shared a wonderful recipe with me … using bananas! Loaded with potassium and a good dose of fiber, bananas are well known for their cardiovascular benefits (read: heart function and lowering blood pressure). Of course, as someone who never turns down instant gratification, I love bananas for the relief of muscle cramps. While I used to believe it was a myth, when I added a banana a day to my diet, those excruciating (and frequent) calf cramps vanished. Bananas with Caramel Sauce
Ingredients:
4 large ripe bananas
75g dairy-free margarine
75g soft brown sugar
3 tbsp golden syrup
Few drops of lemon juice
Method:
Peel the bananas and place each onto a dessert plate.Put the margarine, sugar and syrup into a saucepan and heat gently until melted. Bring to the boil, then reduce the temperature and simmer for 2 minutes or until it starts to thicken. Remove from the heat, stir in the lemon juice and immediately pour the sauce over the bananas. Serve with dairy-free ice cream [if desired].
