All things flavorful cross my plate and I enjoy creating anything and everything that is both unique and mouth watering. I'm usually found with a bulb of garlic in one hand and EVOO or a great Virginia wine in the other. As the Associate Food Service Director/Chef at Shepherd University I've currently been tasked to create low fat, healthier alternatives to the usual high fat foods. We are incorporating a variety of tofu, fresh vegetables and a new Vegan Alley to assist in these endeavors. I am currently workign with our Dietician planning "Dining Lite" meals for the students, staff and faculty. I also enjoy testing and tasting new products and equipment for "Get Your Grlll On", "The Cook's Kitchen", and "A Nice Cuppa. Having top quality ingredients and products makes the different between lackluster and extraordinary food presentation and flavor. The fresh the flavor the brighter the color the healthier the food.
